- 2 tbsp Fairlee Lemon juice
- 1 tsp Fairlee Simple Syrup
- 1/2 tsp (2.5mL) Dijon mustard
- 3 to 4 tbsp (45-60mL) Extra-virgin olive oil
- 1/4 tsp (1mL) Fine sea salt, or to taste
- Freshly ground black pepper, to taste
- In a small bowl, whisk together lemon juice, simple syrup, mustard, and fine sea salt until the sugar and salt are dissolved.
- Add oil in a slow stream, whisking constantly until dressing is well blended.
- Season with salt and pepper.
