- 1 lb (450g) Tomatoes (3-4 medium), diced
- 1/2 Medium onion (1 cup chopped)
- 1/2 cup (125mL) Cilantro, chopped
- 2 tbsp (30mL) Fairlee Lime juice
- 1 tbsp (15mL) Olive oil
- 1/2 tsp (2.5mL) Salt, or to taste
- 1/8 tsp (0.5 mL) Black pepper
- In a medium bowl, combine diced tomatoes, onion, jalapeno pepper and chopped cilantro.
- Stir in lime juice and olive oil, then lightly season with salt and black pepper, to taste.
